Egg waffles

My five year old son brings in eggs from the chicken one night when he dropped the basket and crack them all. At first I created annoyed, I mean their cocks worked hard to lay eggs, you know? Then I decided to just chill out I mean she is five after all and that's when I whipped out my waffle maker and make some waffles this omelette.

Let me tell you, I love them. They are quicker and easier to make than regular omelet and I think they might even taste better. 🙂 I've been making them since and I knew I had to share a recipe with you guys.

I used ham and peppers as the add-in, but feel free to customize it with what you have on hand. Also, they can be a little tricky to get the waffle maker from because they're not as firm as a regular waffle so be careful and don't worry if you tear them because they will still taste great.
