For many people the week before Christmas and the new year be a blur of endless busy Christmas party and year end functions, all require us to preparing a plate together something spectacular to contribute to the festive table.  It can all be a bit frantic and some days there's just not enough time or energy left to make a stunning dessert or another stand out dish to bring.

Materials

  • 250 g block Philadelphia cream cheese, softened
  • 1 cup grated sharp cheddar cheese is delicious
  • Havarti cheese grated 1 cup
  • 2 teaspoons dijon mustard
  • 1/2 dry cup cranberries, coarsely chopped
  • 1/2 cup pistachio nuts, chopped
  • wafer thin crackers for serving

Instructions

  1. Add cheese, mustard and dried cranberries into a large mixing bowl and stir until very well combined-you can use the bench mixer to do this or do it by hand. Just make sure that the mustard spread evenly through out the mix
  2. Shape cheese mixture into two even log shaped and then roll in crushed nuts, pressing to ensure pistachios comply with either.
  3. Roll log tightly in cling wrap and chill for at least an hour to firm up.
  4. Slice into rounds and serve with crackers or thin wafer as part of a cheese platter
