Volcano Potatoes

Hi friends ... you guys certainly know kan tntang potatoes. This time I want you know ya do I cultivate the potato into food that is delicious and nutritious.


Here is an interesting new way to cook potatoes.  This is potato volcano.  I parbaked potatoes, their concave, stuffed them, wrap them in bacon and baked them.  And, while I don't picture the sauce, it was pretty good too.  Enjoy!

VOLCANO POTATOES
Ingredients

  • 4 medium potatoes, washed
  • Olive oil
  • Salt pepper &
  • 8 slices of bacon
  • 1/2 C chopped ham (or Turkey)
  • 3/4 C shredded Cheddar cheese
  • Barbecue sauce C 1
  • Sliced green onions, for garnish


FOR THE SAUCE:

  • 1 C sour cream
  • Hot sauce, to taste (any brand)
  • 1 teaspoon smoked paprika
  • 2 teaspoons garlic powder
  • 2 teaspoons onion powder
  • Salt, to taste pepper &


  1. Direction:
  2. Preheat the oven to 400 degrees.  Rub the potatoes with a little olive oil and sprinkle on salt and pepper.  Wrap potatoes in foil and bake for about 20 minutes.  
  3. Meanwhile, mix the sauce ingredients and chill. 
  4. Preheat the grill to about 350 degrees.  Open the potatoes (using oven mitts).  Cut a small piece from the end of greases potatoes so you can stand the potato. Cut a small piece from the other end.  Carefully scoop some part of this goal (using the Cuisipro Apple or small spoon or jalapeno Cuisipro) to make room for the things the potatoes (it's okay if they break a little bit.  The meat will hold the skin in place).  Wrap each potato with 2 slices of bacon, using toothpicks to secure the meat.  
  5. Stand the potato on the end of fat and stuff ham and cheese on potatoes in layers, ending with cheese on top. Direct fire baked potato for about 30-40 minutes, basting with barbecue sauce every 5-7 minutes, until potatoes are fork tender and meat is cooked.  Garnish potatoes with green onions and serve with sauce.
