one among my favourite methods to experience a snowy wintry weather morning all through the holidays is by napping in, wearing my PJs all day, watching the Grinch and home on my own and of course, enjoying brunch. Bonus if hot chocolate is likewise included with lots of whipped cream, babyyyy.

INGREDIENTS
For the pancakes:
- 2 tablespoons almond milk (or water)
- 1 box Simple Mills Gluten Free Pancake & Waffle Mix
- 2 eggs
- 4 teaspoons melted coconut oil or melted ghee
For the toppings:
- 1 tablespoon pecans
- 1 tablespoon color candied pieces (or sub cranberries)
- ½ banana, sliced into ½ inch round coins and then in half
- 4 tablespoons dark chocolate chips, dairy free if desired
- ¼ cup shredded coconut (not the large flakes)
INSTRUCTIONS
- In a massive bowl mix collectively 1 cup easy mills blend, eggs, almond milk, and coconut oil until nicely mixed.
- Warmth a gently oiled griddle or skillet on medium heat. Pour 2 tablespoons of batter onto griddle for the snowman frame pancake, and pour 1 tablespoon of batter onto griddle for the snowman head.
- Cook until pancake starts offevolved to bubble and the other side turns golden brown. flip pancake and cook dinner until pancake is golden brown on both facets.
- Repeat the above steps to make four general snowmen (a head + a frame).
- Once pancakes are cooled, pinnacle them with shredded coconut, upload chocolate chips to make a face, M&M’s for the buttons, banana slices for the headscarf, and ½ pecan for the nose. Serve with maple syrup in case you’d like or nut butter. Makes four snowmen (2 pancakes each)
